Day 18, 19 & 20: 21-DSD T-minus 3 days!!

After today I will have 3 full days left on this detox. I can’t believe I have made it this long. I know I haven’t followed the detox perfectly, but what is perfect anyways.

Food/exercise for Day 18 (Wed., April 24, 1013):

am: coffee w/ paleo creamerday 18 amcoffee

Breakfast: 2 eggs/  1/2 cup marinated beetsday 18 bk

1 hr stroller plyometrics class

Lunch: ground beef patties w/ pickled radishes; dill pickles; black olives; 1/2 cup roasted sweet potatoes; 1/4 marinated beets; 1/2 cup steamed broccoli; 4 capsules fermented cod liver oil (green pasture); kombucha (guava)day 18 lunch

Afternoon: coffee w/ paleo creamer

Dinner: (leftover) southwest frittata w/ 1/2 avocado; marinated beets; homemade applesauceday 18 dinner

Bedtime: trail mix (raisins, coconut chips & sunflower seeds)

Food/exercise for Day 19 (Thursday, April 25, 2013):

3 mile run: total time 30:13   10:04 min/mil   157 avg bpm

am: coffee w/ paleo creamerday 19 amcoffee

Breakfast: 2 eggs ; 1/2 cup marinated beets (sorry no pic, I needed to charge my camera)

1 hour (mat) Pilates class

Lunch: 4 slices deli turkey w/yellow mustard, carrots, green onions & spinach; black olives; 2 hard-boiled eggs; 1/2 avocado; 1/3 cup roasted sweet potatoes; Kombucha (guava)day 19 lunch

Afternoon: Iced latte; trail mix (banana chips, raisins, sunflower seeds & coconut chips)

Dinner: (leftover) southwest frittata; marinated beets; steamed broccoli; homemade applesauceday 19 dinner

Bedtime: peppermint tea; trail mix

Food/exercise for Day 20 (Friday, April, 26, 2013):

am: coffee w/ paleo  creamer

Breakfast: 2 eggs w/ spinach sautéed in bacon fat; 1/2 cup roasted sweet potatoesday 20 bk

Midmorning:  2 slices of bread w/ almond butter & honey (not 21DSD approved)

Lunch: 4 slices deli turkey w/ avocado, spinach, carrots & yellow mustard; black olives; steamed broccoli; homemade applesauce; 4 capsules FCLOday 20 lunch

Afternoon: coffee w/half & half (not 21DSD approved); 1/2 of a smoothie (1 whole banana, 1/2 avocado, 1/2 cup coconut water, handful of spinach, 1/2 TBL gelatin & coconut chips)

Z has no patience. He couldn’t wait to get to the smoothie!

Dinner:Trader Joe’s chicken jalapeno sausage w/ yellow mustard (yes, I know that is a lot of mustard, didn’t realize it until after); paleo fried zucchini (recipe below); kombucha; dill pickles; pickled radishesday 20 dinner

Paleo fried zucchini:

  1. Slice zucchini into coins.
  2. In one bowl: mix coconut flour (approx. 2TBL), arrowroot flour (1 tsp,-works as a binder), italian seasoning & salt
  3. In second bowl: 1 whole egg + a lil water
  4. Dip zucchini coins into egg wash then into flour mixture and place in hot skillet w/ coconut oil.
  5. Flip the zucchini when they start to brown
  6. Once both sides of the zucchini is brown, place them on to a paper towel lined plate.
  7. Enjoy !!!

Bedtime:trail mix; peppermint tea

organicproducedel4-25-13I received my organic produce box yesterday with lots of veggies. Once my 21DSD is over I will start posting my bi-weekly produce deliveries again.

My next post will be about my Sunday food prep day. I will include pictures, grocery list for the week, tips on food planning and meals along with the recipes. Food planning has helped me tremendously since going Paleo and has really helped me stay on track during this 21 day sugar detox.

    The zucchini sounds super tasty; thanks for sharing the recipe.
    Our go-to meals are always Mexican- salads, burritos, etc. Quick, easy, and healthy!
