Hope everyone had a wonderful Mother’s Day yesterday!
I know I sure did!
My first trail run with the hubby and Z + a trip to Whole Foods= A fantastic morning!
After a busy morning yesterday, I wasn’t feeling like doing a lot of food prep. This afternoon/evening my goal is to finish up my prep for the week, so I can make sure it is a successful week 2. I will go more into how my first week 1 on the whole30 went in an upcoming post. Stay tuned!
I feel like a broken record of what I’m about to say, but I’m writing this post up real quick for those that still need some meal ideas for the week which means no shopping list, again.
Let’s get to it!
Food Prep:
- roasted beets w/ red onion and fennel
- hard-boiled eggs
- Peruvian chicken (Nom Nom Paleo)
- Paleo Mayo (The Clothes Make the Girl)
- mint-infused water (to try to help me drink more water!)
- bake bacon (use this recipe to bake your bacon–>>>Nom Nom Paleo)
- rinse black olives
- sauté green beans w/ coconut oil and garlic
- sautéed broccoli
- lemon roasted green beans (Primal Palate)
Breakfast ideas:
roasted beets + eggs + avocado
sweet potato hash (Nom Nom Paleo) + fried eggs +avocado
Lunch ideas:
leftovers from dinner
salami + turkey/chicken roll-up + pickles (Bubbies) + sauerkraut (Bubbies) + black olives
Dinner ideas:
Hamburgers (sans bun)+ crispy caveman fries (Pretty in Paleo) + pickles
Moo Shu Pork (or chicken) (Well Fed 2) (Seriously, just go buy her book!)
Taco Salad w/ creamy cilantro lime dressing (Living Loving Paleo)

broccoli Bagna Cauda (Nom Nom Paleo <<—-couldn’t find it on her blog, you might just have to buy her book!)
If two of the dinner options look familiar from last week, than you are right they are the same ones. Life happened and some meals just didn’t happen as planned.
My Mother’s Day Menu:
- grilled Peruvian chicken (Nom Nom Paleo) <<—–I only found this recipe in her cookbook!
- grilled marinated zucchini (Gather-Primal Palate)
- fennel apple salad (Gather- Primal Palate)

This was our first meal on the grill since last summer and it wasn’t because of the weather warming up. The weather was unseasonable warm all Winter long. We finally made a trip to Home Depot to get propane for the grill, after running out last Summer. Yes, sadly it took only a 10 minute trip to the Depot to fix the problem. The hubby also bought us a picnic table since the outside table we had been using was not functional. The area we live in is known for very high winds and our previous table had a glass center in the middle (don’t ask us why we bought it in the first place, knowing the kind of winds we have) and one day the wind just picked it up and threw it across our patio, the glass table didn’t even stand a chance. So, fast forward to today, we have a very heavy picnic table, new propane tank and we are ready for summer grilling!
I prepped all the food and hubby did all the grilling. One of the reasons why I love grilling is because there is virtually no mess in the kitchen and hardly any clean up. Love it! I tried out a new chicken recipe which is Nom Nom Paleo’s Peruvian Chicken. I don’t know if it was because we grilled the chicken or the recipe, but the chicken was the best I have ever had! My hubby votes it was his grilling skills, my vote was the Peruvian chicken marinade. Honestly, between you and me, it was a little of both. You must try her Peruvian chicken recipe!!
Nerd alert!!
Before I ate my Mother’s Day dinner, yesterday, naturally I snapped a shot of our dinner and posted it to IG (Instagram). Normal, right?!? Since I am addicted to IG and always want to see how many “likes” my IG pics get, I checked after 5 minutes of posting and this little diddy happened:
Yes, you are seeing currently! Nom Nom Paleo commented AND “liked” the picture on my IG! I was totally freaking out, but sadly again there was no one around that I could share my excitement with or least no one that would know what I’m taking about. Good thing I have friends who are just as nerdy as me! I get a text from a friend who also took a screen shot of the IG comment that Nom Nom Paleo had made.
That’s a sign of a good friend 🙂 And you know I am a fan of all those exclamation points!!!!!!!
So, this is where my life is at now, getting excited when paleo bloggers comment and like my IG pics!!
What do you look forward to most in the Summer?
What is your favorite food to grill? My new thing is grilling fruit! Peaches and watermelon are the ones we have tried so far. Any other suggestions?
